Japanese salad with surimi flakes

Sushi is one of the most well-known treats from Japan. This salad combines sushi with Salanova lettuce and gives you the Japanese kitchen on a plate! 

Ingredients

1 sheet of nori
1 head of Salanova lettuce
1 cucumber
1 lime, scrubbed
1 avocado
1 tsp wasabi paste
2.5 tbsp mayonnaise
200 g surimi sticks
2 tbsp black sesame seeds

Preparation
  1. Cut the nori into thin strips of 5 mm x 3 cm. Halve the lettuce leaves lengthways and arrange them in a shallow dish or tray. Halve the cucumber lengthways and use a teaspoon to remove the seed cavity. Cut the halves into diagonal slices and arrange them on the lettuce.
  2. Grate the green rind of the lime and then squeeze the lime to obtain the juice. Destone and peel the avocado and then slice the flesh widthways. Sprinkle the slices with a little lime juice and then arrange them on the lettuce/cucumber. Mix the rind and the rest of the juice together with the wasabi, the mayonnaise and 1 tablespoon of water to make a dressing. Season to taste with salt and pepper. Add to the salad. Pull the surimi sticks apart slightly and arrange them on the salad. Toss the salad and then sprinkle the sesame seeds on top.

Tip: Cook 200 g of sushi rice according to the instructions on the packet until al dente. Dissolve 2 teaspoons of sugar and 1 teaspoon of salt in 3 tablespoons of rice vinegar and then drizzle over the warm rice. Leave the rice to cool and then mix into the salad for a complete meal.
